It will be cooked on a Geroge Foreman grill. I've tried a few different seasoning . I can't remember which ones at the moment, I would have to re-check the spice rack. Heck forgot the original question as well. Rub with light oil, a dust of old bay, and some fresh ground pepper. So far I like that combo, but I'll try your suggestions when possible. Then I sprinkle on a real small amount of (you don't need much or it will ruin the tilapia) black pepper, salt, and brown sugar. I take a foil pouch and lace some aromatics on the bottom like julienned bell peppers and onions. Then I lay down the tilapia fillets and season with some salt and pepper and a bit of fresh thyme. Lastly, I throw some thin slices of lemon on top, throw in a pat of butter, and add half a cup of white wine and seal the foil pack. Coat with flour seasoned with salt and garlic pepper. Dredge in milk (or eggs if your waistline can handle it) and coat with a mixture of panko and grated parmesan cheese (splurge on the good stuff the American cheese sold as "parmesan" doesn't have the taste. Saute in hot oil.
