I would like to disconnect a gas dryer and cap off the gas line
going to it. How is this done correctly without the danger of gas
igniting from the gas water heater.

Hello Nskate3. Welcome to my Gas Appliances forum and our Do-It-Yourself Web Site.

Quick, Safe & Simplest method is to turn off the water heaters pilot. The control knob on the water heater is rotated to the "OFF" postion.

Then wait 2 minutes to insure the pilot flame extinguishes and your almost ready to start. I say almost because you have to be positively sure no other source of ignition exists. Look around.

Check the prior questions pertaining to dryers, within this forum, for other postings on this topic of disconnecting a dryer, for additional information.
