I have an old headboard & 2 matching bureaus in dark wood finish, these pieces were bought unfinished and stained dark many years ago, although they are in very good shape i would like to liven them up for my 18 month old daughter my making them white with pastel colored drawers .. how would i go about this ??? could i recover the furniture with the paint that is used to reface cabinets and then repaint it to much lighter colors????

Three steps -
Sand
Prime
Paint.
Scuff sand the entire piece to remove the currentr sheen. You don't have to remove the existing finish, just rough it up.
Use a good primer - I use either BIN or KILZ for projects like this. Benjamin Moore's Fresh Start is also good.
Use a good paint - semi-gloos is more durable (and more easily cleaned) than flat. You can use either oil based or latex paint.
