Just how aged must it be before I can use it? There is a mound under the roost that needs to be shoveled out and I was wondering can I just throw it around the garden and the various other plantings when I haul it out or does it have to sit for a certain time??

You lucky person! It should age for about a year, otherwise you risk burning the plants. If you have a compost pile, you could mix it into that and let it age.

mscratch1,
The other option is to spread it on the veggie garden in the fall.
By the following spring it will not do the 'burn'.
