I plan to insulate behind the walls (but not the ceiling) of a new room in my basement which (someday) will be a home theatre. What is the best way to sound insulate, as I think the room will be rather 'flat' sounding with just the drywall.

Are there any products that one can apply to the surface of the drywall to provide better sound quality?

There is a product that you can cover the walls with after you insulate them. It looks like a tarp and it simply gets tacked up on the studs before you drywall. This will provide a complete sound barrier for the room. The product is called acoustiblock. Check it out by going to acoustiblock.com
