If I lay ceramic tile underneath the kitchen cabinets, what do I do if one breaks? How do I remove it?

if you lay them right - the tile should never break :p . Not sure I follow you question 100%. Are you concerned one that is partially under the cab with break? if so see my first point:D

A tile breaking has more to do with what's dropped on it than how it's layed :-) If you install the cabinets on top of the tile and one breaks you're $%^%*&(. I suggest installing the cabinets on top of the underlayment and laying the tile up to the cabinest.

I disagree with Kilot but hey we are all entitled to our opinion, if installed right dropping things on tile will not cause them to break - the tiles that is. Most pros say go under the cabs

Most frequently tiles break due to movement in subfloor. Installing tiles on concrete underlayment tends to protect against movement. Movement under tiles can result in grout failure as well as broken tiles. Tiles under cabinets will be protected by the cabinets.
