I recently started a project. Cut all the wood to the right size and made sure everything fit together properly. I took a piece of scrap and tried minwax poly on it and there was almost no change. I'd like to keep a natural look to the wood, maybe just a shade darker. Any recommendations on stain for birch?

Birch is quite dense and will not absorb much stain. The poly alone will only give a very slight golden cast. If you select a minwax colonial maple or even golden oak stain these will not be dark once applied to the birch. You can even lighten them further by wiping off excess stain after application. Like you've already tried, test on scrap pieces first.

Try a small can of the Minwax (waterbased -- bluish can) "Vermont Maple".
