We have a doorway leading into the kitchen and one going out of the kitchen to our downstairs family room. We'd like to cut away above the doors and add an archway. Should i be concerned about these being low bearing?.
Any ideas/procedures are appreciated.

How wide of an archway is a big question here.
If you are leaving the opening at about 32", don't care about load bearing. If you are making it a 12' archway, you need to know if it is loadbearing and what you are holding up.
If you are parallel to the ceiling trusses, you are most likely not load bearing. If the wall(s) is perpendicular to the ceiling trusses then check below the wall to see if the wall is being supported (a basement wall must support a first floor bearing wall), or check the attic to see what is sitting on the wall and if the wall is required to bear some of the load.
