I am remodeling a bathroom in which an old closet is being turned into a shower. When we tore down the drywall, we noticed that cold air returns were in thee walls (formed by 2x4's and sealed by the drywall). The shower enclosure I have chosen attaches directly to the studs. How to I maintain the efficiency of the cold air retun behind the new shower enclosure?

Anything that blocks the flow of air will impede the proper operation of your HVAC system. Perhaps relocating the cold air return is an option.
