Maybe this is a crazy idea......but I'm just not sure I need to gut everything. It started with the windows, now I've been lured into re-doing the dining room. I have old lath and plaster walls, which are amazingly in great shape, but in the dining room, I have a thin wood paneling covering the plaster (who knows what it looks like behind that). I have blown in insulation (I'm not sure how effective it is). Is there any reason why I shouldn't drywall over the existing wall and trim it up at each door, window and where it meets the ceiling? (ie.. extension jams, moldings, etc.) Any help in this area would be greatly appreciated!

Sure. If the plaster in the rest of the room is in good shape I bet what is behind the paneling is o.k. too. But even if it isn't you can put a layer of 3/8" rock over the plaster. It will mess with your jams a little.
