I am redoing our bathroom. Do I have to put a few coats of mud on the greenboard before painting or can i just seal the bare board with something and then paint. If so, any drawbacks to doing it this way? Will it not be smooth if I do this?

You have to tape, mud and sand the seams and nail/screw dimples first.
Any defects will be seen. Paint will not hide them.
You can prime and paint the greenboard itself.
