I am remodeling our bathroom and need a new floor. What is the easiest way to remove the vinyl floor - or should I put a new underlayment of some sort over the old floor then lay the new?

You may be able to pull it up fairly easily, maybe not.
If not, you can lay 1/4" smooth luan paneling over it, and use leveler to smooth out the nail/screw dimples and seams before laying new vinyl.
