I would like to remove the two subfloors to get back to the original plank flooring.Any ideas about how to go about this as to not damage the original floor. Someone suggested using a circular saw with a shallow blade setting and cutting out small sections and using a prybar to lift the sections out.This project is in the kitchen and another problem may be cutting as close to the cabinets as possible.

Cutting out and prying up sections of subfloor will get you down to the plank floors. You may not like what you find because the planks will be full of nail holes which will need filled. The condition of the floor may not be up to your expectations. You will always wonder about those original planks if you don't do this project. It is recommended that you pull the base cabinets and remove the subfloor there too.
