I am building dining room tables for a restaurant, using lumber from a sawmill. This lumber is weathered but never been stained or varnished, etc... I would like to put a clear protective coat on the table tops, perferablely something that doesn't take a lot of coats and when dried it gives the appearence of a thick piece of plastic on top of the wood table. What type of product do I use? Thank you for any help that you can give me!

It sounds as though you're leaving the tops with an unfinished, rustic look. What you may want to look into is a two-part casting resin: a clear, thick plastic coating. One is made by Aristrocrat.
It is fairly expensve, but I believe I have seen it in half or full gallons. You pour it on and let it level itself. Before doing a full table, do a test piece of lumber.
