how reliable is water-based polyurethane? i know it may raise the grain of my old mahogany table, so what grade of sandpaper should i use to smoothen the bumps? how long is the waiting time between coats and lastly how many coats should i apply to the table? thanks

I've used it on oak stair components, and it came out very good.
I either used 200 or 320 grit paper between coats, which will dry in just a few hours. You could give it a test run. But I think I would use oil base poly on a nice mahogany table.
