Some of my scraps - specifically fruit - molded before I put it out in the compost bin. Should I discard it or is that the point. Does it mold in the compost bin?

The mold is part of the decomposition process - I would just add the fruit to the mix. The only time you really have to be careful about what you are putting in is when there is a disease or if the material you are composting has been exposed to pesticides.
