I have sanded my butcher block kitchen counters and I am wondering what would be the best finish to put on them. I would prefer not to use a poly because I don't want the shine or the scratching to accur.Any suggestion would be appreciated.

If you just had a butcher-block island I would say to use either mineral oil or possibly find some lemon oil for buther block wood.
If you've got an entire counter, I would still recommend some type of permanent finish since oils are little protection for wood.
You could use a low gloss or satin poly. Either way you are going to accumulate scratches. The poly will still help protect the wood from most all spills and stains.

Another alternative would be to use what is usually termned a 'salad bowl' finish. It's a wipe on varnish similar to tung oil made especially for finishing wooden bowls. It's available from many sources catering to teh refinisher, including those listed below:
