Hello Criss
There is no best way to determine the shape or contours of your flower beds - it kinda depends on your likes, wants and needs. Other than a few simple rules like keep the short stuff to the front and the tall stuff to the rear and allow space for the plants to grow, you have to decide what you like and don't like, then go from there.
If you have in mind what plants you want to put in, you can put stakes where you think you want them (or if you have the plants, put them in place in their pots), then either use a string to define a straight edge or a garden hose to lay out a flowing edge. Start stripping the turf from the rear (or centre if it is free standing) of the bed and step back every now and then to make sure you still like the shape (it's easier to stop short than have to replace sod)...
Have fun with it and good luck :)
