We are remodeling and just removed the old plaster off this chimney. What is the best way to remove the small bits of plaster from chimney and then to clean the old brick some? Any help would be appreciated.

... taking your time to chisel, chip and delicately brush away the plaster remains the best way.
Try not to disturb the mortar joints around the brick... this will leave you with that "just laid look" many chain restaurants desire these days. Inspect the joints, to make sure that all bed and head joints are intact. After cleaning with a mild masonry detergent (DON'T USE MURIATIC ACID), you may want to consider a sealer to basically "keep the dusty look down."
