We have a 100 year old house. We need to remove the old "washboard" wood from 4 walls to hang dry wall. On 2 of the outside walls we are going to put insulation. Can one wall be done at a time when tearing down the wood and putting in the insulation or does it all have to come down first, and If we were to tear down all of the wood first, would it be ok to leave the walls exposed until all the drywall could be hung back up?

Don't see why you can't do it one wall at the time. You just won't be able to put the drywall mud in the corners until you have two that meet. How good a shape is the wood in? You might want to try to be careful when you pull it down. Try to locate an architectural salvage company near you and see if they might be interested in the boards (if you are not going to re-use them). You might be able to sell them to the salvage company. Of course you do realize you are going to be getting into a fatal DIY'ers disease called the "Might as Wells". How about the elctrical wiring in the walls, well you "might as Well" update it. Get the picture. Good luck and repost to say how it went.
