Has anyone used z brick (thin bricks) behind wood/coal burning stoves? What do you use to put them up? I am also having trouble finding them, where do I look?

I have used thin brick, once in the past, but not for your purpose. Mastic, thinset, or conventional mortar, depending the use and the substrate. Places like home centers and masonry supplies. If you seek them over the web use "thin brick" and/or "thin brick veneer" as search criteria.

I don't think z-brick qualifies as a non-combustable material for this use. If the stove mfg and/or local code doesn't care what is behind the stove for your distance, then use the z-brick. ie) if its safe for drywall, it would be safe for z-brick.
