How are vanities attached on top of the cabinet generally. I want to remove my old one and put on a new one.

Usually they are just held down with a few scattered drops of caulk around the top edge of the base, and the plumbing connections themselves.
Disconnect the plumbing, cut any caulk along the wall and sink, and raise it up and out.
The vanity base should be screwed to the wall.
