I have a 40+ year-old mahogany bedroom suite, that is being stripped of stain/shellac. The stripper recommended professional refinishing versus do-it-yourself. He also mentioned die-staining as preferred method. Any comments/thoughts?

Not putting your expertise down, but let's face it: A professional is SUPPOSED to be able to do a better job than you can - that's what he's paid for.

I agree wholeheartedly with dye staining. Oil based stains can obscure the grian of the wood with their pigmentation. This possiblity is removed when using a dye. Color , clarity, and depth of appearance (after finishing) are all enhanced with a dye stain. Personally, I use a solvent based stain (alcohol soluble) becasue it doesn't raise the grain of the wood.
