I have one piece of dark marble to set. Why do I need to use white thinset? Or can I use the grey thinset I have for the rest of the floor tile? Should I seal the unfinished surfaces of the marble tile? Also do I need to use a dirrerent notch size on the trowel under the marble than the ceramic tile?

Okay, Steeda. You may not think this is a big deal, but it is. Certain black and green marbles tend to "curl" when they get wet, so epoxy is used to set them.
In your case (and not knowing exactly what you're doing), I would say use the thin set you are using. You should be using modified thin set for everything.
