There is a triple-wall wood stove pipe that is in the corner of a second story room in my house(installed by previous owner). I am finishing the room (to be a bedroom) & I would like to frame in around the stovepipe and drywall it. I have felt the pipe when the fire is roaring and it is warm to the touch, but not too hot to touch. Are there any specifications (or common prctices) relating to distances or materials that I should be aware of?

Check with your Building Inspector for local code.
These triple-walled, so-called "zero clearance", flues are supposed to be safe to box in, and you should be able to do it.
