need advice on which finishing agent to use on new maple cutting boad, mineral oil versus cooking oil versus other?

Jerry,
I don't think you want to use either mineral or vegetable oil - both will spoil/sour. Try a "salad bowl finish" or one made with beeswax. Some hardware stores may carry what you want. If not, try Woodworkers Supply or Constantines.
