I'm trying to take off old door knobs - but the screw is behind the face plate. I can't find anyway to remove the knob. Any help would be appreciated.

If you look carefully at the shank of the doorknob, just before it goes into the face plate, you will see a small tab that you can depress to slide the doorknob off. Someplace around the edge of the faceplate, there should be either a slot that you then slip a small screwdriver into and pop the faceplate off, or there may be another tab that you depress in order to get the face plate off. Several mfgrs use systems like this. They are very similar to each other, but have their own little differences
