I bought an onion (white?) from the grocery store, never ate it, and it began to sprout nice long green shoots. I placed in the window and it is thriving right now, but I know that I need to do something for it, or it will eventually die. i just want it to be happy. Should I plant in dirt or what?

Go ahead and pot it up.

I wouldn't expect it to give more onions, because the ones that you grow in the garden are from little sets (babies).

That said though, it appears that you just want to have some fun with this one so go nuts! Keep in mind that it will be happier with lots of light.
