is it possible to lighten up old kitchen cabinets with a dark stain via bleaching, sanding removing old stain , etc.?
How would you lighten them as much as possible and once this is done could you stain them lightly to match a light oak color?

A good 2-part bleach (available at most home centers and paint stores) will remove a lot of stain - but you have to get to the stain first.

That means stripping - not sanding - the cabinets. (I'm assuming the cabinets have some kind of finish on them.)

Just sanding will not remove all the old finish, and without removing the finish the bleach will not work properly.

As for staining to match, neither you or I will have a clue until the cabinets have been prepared as above - but it is possible.
