Would anyone happen to know what I can use to clean my wood cabinets of natural oil build up? And in keeping along that line, any good weekly cleaner/restorer to put on the cabinets and wood paneling?

Dish suds will do the job on woodwork that has been well maintained. Murphy's Oil Soap (from your grocery store) works well on woodwork that needs a little extra help. Paint thinner will clean all but the most seriously abused woodwork.
After cleaning, a good coat of paste wax will alleviate cleaning in the furture - reducing it to an easy dusting. Renew the wax about once every 6 months.
