I’m remodeling my home and I have the room down to the studs and someone told to place plastic over the exterior walls to make the house more energy efficient. What your thoughts?

Depends on where you put the "plastic". If you can install a housewrap like Tyvek to the exterior side of the studs, do it. But to install it properly, you have to have the siding removed. It is installed in a continuous roll, not just added between the stud bays. If you can't install it to the exterior side of the studs, then simply insulate the walls with a kraft faced insulation. Overlap the kraft on the face of the studs, so that when you are finished, you can't see any of the wood. Then you are ready for sheetrock.
