I have removed the ceramic tile in the bathroom. I have been told that since we live in a high-humidity area that I need to remove most of the mortar before I can lay new tile. A tile installer here lays vinyl flooring over the mortar to provide a vapor barrier. I do not want to do that. This bath is large enough that using a hand chisel and hammer are not appealling. Any suggestions?

I think you've recieved some not-so-good advice. The thin set is not affected by humidity, and don't let anyone lay linoleum if you intend to install ceramic tile.
You do not need to remove all the thin set. Remove what you can, and skim over the top with new thin set. Push down on the trowel and fill only the depressions between the ridges. You can then install your new tiles.
