I'm not clear on what tile pieces to use for the round
corners on the countertops. Is it a V-cap or Sink Rail?
If so how do you make the cuts so it will go around the
corners? Corners are almost a half circle.

I'm not a pro, but I've dabbled in tile a bit. I've never seen round corners tiled before myself, but then again I haven't seen everything either. I'll guess these are outside corners and that we're talking about tileing the counter edge (as opposed to the top surface). I belive the edge tiles are called v-cap. The "field" v-cap edge tiles are about 6" long. The only outside corner tiles I've seen would only work on a square corner. They are about 2" x 2" and soften the square corner nicely. Could be that you'll need to square the counter top corners before tiling. But I could have misunderstood the question, so you might do best to check other's answers as well.

I am sure you have already tried this , but have you asked the tile supply you bought the tile from if they make an outside corner for your trim.

If the V caps you mention go with standard wall tiles they carry a universal number which describes them, in this case, "A-8262." The corner you need is AN-8262. You'll have to trim the counter square (as White Dog suggested) to use them.
The alternative is sawing the caps into small pie-shaped segments, which looks a little tacky even when done by a pro. There are no other pieces available. You can have them custom made, however. Expensive.
