I have a bedroom set that is wood with a wooden veneer outer layer (I hope I am getting the terminology correct). I would like to paint this set with a crackle finish paint to give it an old look. How would you suggest taking the sealant and finish off of the veneer?

You're making extra work for youself by stripping the piece. Any good paint and varnish remover will do the job - but it's a job you don't have to do.
Regardless of the crackle paint you use, sand the piece thoroughly. You don't have to remove the old finish, just rough it up enough for a new finish to adhere to. Now's the time to remove any irregularities as well, such as runs, etc.
Apply a good primer - I suggest either BIN or KILZ (2 coats) sanding lightly after each has dried to remove any mistakes. Wipe down after sanding with a damp cloth to remove dust. After the second primer coat has been sanded and dusted, go ahead with the crackle finish.
