I am in the process of stripping my kitchen cabinets. I have been told that the wood is a light birch. I like the color and look of the natural wood. What type of finish should I put on wood now?

You really have a range of choices, but if they were mine, I'd opt for Polyurethane. It's durable, fairly easy to apply, and inexpensive. The odor while wet is not overpowering, either, which can be a consideration in households where a member has respiratory problems.
When using poly, I cheat. I buy brush on and aerosol poly by the same mfg in the same sheen. I use the brush on poly to build up the finish so I can sand it absolutely smooth, then use the aerosol for the final coat. I'm pretty good with a brush, but I can't get as smooth a finish with a brush as I can with a spray...
