Dealing with new construction, do I need to tape the joints of my drywalled ceiling prior to texturizing?

Hello,

Yeah, you sure do. If fact, you normally have to do several coats before attempting to texture. I would recommend a first coat (to bed the tape), then sand any large imperfections, followed by a second coating of mud. After the second coat, sand till smooth. If you have large imperfections, you may need to apply a third coating.
If you're applying a heavy texture, like a custom mud-dobber texture or heavy orangepeel, you will be able to get away with having less than perfect joints.

Good luck-
