1. We are replacing the family room carpet and kitchen vinyl with hardwood (3/4"). Does the family room need underlayment to match its height with the kitchen?
2. Removing the vinyl floor in the kitchen leaves some sticky adhesive on the underlayment. Can it stay? Should it be removed with solvent and scraper? Will installing tar paper over it work?

Yes you need underlayment to match the heights.
As long as it is only adhesive and not anything else with it the adhesive can stay. 15# felt will work too.

I installed prefinished (Bruce) maple hardwood floors in our previous house. We miss them terribly...however I would NEVER install them in the kitchen again. Even the maple (one of the more dense woods) suffered numerous dents and water damage after 5 years. We had a refridgerator with water available through the door that always dripped when you got water and one episode with a dishwasher backup. Even though we "jumped" on that quickly the floors got slightly warped 2-3 days later.
They sure look nice and are comfortable to walk on though!
