I'll put the new over the old. New questions
The thinset I have was to use w/ the mud job, can I use the same stuff OR is there a different type I should get?
Also - I have a 1" to 2" gap w/ loose (seperated) mosaic tiles along the new tub. What's the best way to put these in place so I get good adhesion to the new tile?

Gee, Mike, now I feel like a bully.
The thinset you have is probably not the right stuff. You need a top rate polymer modified one. TEC makes "Full Flex." Custom Building Products makes one, and so does everyone else who makes thin set. Read the "uses" on the back of the sack. Going over tile has to be included.
As far as the loose tiles at the tub are concerned, remove them along with anything else that might be loose under them, and fill the area with thinset. Use a stick or a trowel to bring it level with the floor.
