We would like to re-tile our existing tile shower and I'm wondering if I can just remove the old tile and redo the new with out having to mess with the drain or the existing slope in the floor..

I think the the existing tile is on concrete slab.. (Florida home)
and I know I will have to replace the dry wall with backer board but I would rather not have to redo the floor..

How is a project like this usually done?

You will unlikely be able to salvage much. Here's a how-to on making a new pan. If you are on cement slab, you don't have to lay down the tar paper and lath like they are doing in the instructions.
