I look at a one car gargare roof today its has pankets . I want to resheath it with plywood I am worried if i tear off plankets running the plywood the middle seam center would sag what would i do to prevent this

I'm not even sure what you mean by plankets or pankets? Could you describe a little more clearly what you mean?

I'll assume you mean planks - individual boards rather than a sheet material. If they are damaged they can be removed and replaced with plywood. You simply cut the plywood sheets so that the ends fall in the middle of one of the garage rafters. That way there are no seams to sag.
