I am finishing up a cabinet repaint, with latex paint and a latex-based colorwash. I would like to coat with clear poly to protect the finish. What type do I use over the latex paint? Would something like Minwax Polycrylic be best?

Yes polycrilic would work.Frankly if you had used oil based paint you would not need a cover,that said water based poly will not yellow and should work well enough.
