Does the standard jamb depth of 6-9/16" work for 5/8" sheetrock or are jamb extensions neccessary?

Thats not the standard jamb...unless you have 2X6 walls. If they are 2 X6 you should be fine..always a bit of adjustment needed.

A 2x6 wall with 1/2" sheathing and 1/2" drywall is roughly 6 9/16. If you have 5/8 drywall instead of 1/2" you would probably want to fudge the door in an extra 1/8" so that you didn't need any extension. The exterior trim (door brickmould) could be notched out over the sheathing 1/8" instead.

Some guys would probably not worry about it (since it's only 1/8), and just beat the edge of the drywall down when they go to trim the interior of the door. But 1/8" can turn into 1/4" pretty quick if the wall isn't perfectly plumb and they need to adjust the door out a little bit on one corner. It's always nice when door and window jambs are perfectly flush with the drywall.

Another option is to add a 1/4" extension onto the door, which may make it protrude past the sheetrock in a few places, and then be sure the drywall finishers float around that trim, to level the drywall out with that 1/4" filler. A trim carpenter would really like that. ;)
