I do not have the space for two sinks in one vanity, only about 5', we want some counter space.
So I am planning a second vanity on the opposite wall. Both vanities will be the same.
My question is how much space should I have between the vanities so when we are both using the sinks etc. we don't bump into each other.

I hate to be crass, but stand together sideways and measure yourselves at the hips. There you have it. Don't forget having the vanities apart like that will require new drains and vents as well as supply lines.

The vanities are not on the same wall, but on each wall opposite the other, so we would be standing butt to butt.:)

Hi Dan Thompson,
There are 2 important issues to consider
- As per code you need at least 21" in front of each bathroom fixture or furniture, but the optimum clear space is 30", measuring edge to edge
- If the vanities are in opposite walls, consider the necesary space to open the doors of both vanities at the same time without a "door collision" :D

Dan, I realize you planned on opposite walls. You still need room for two bodies and, as Patricia stated, door opening room. If I were designing it, a minimum of 4' between countertop edges.
