Is plain cat litter(i.e. Jonny Cat) a safe way to wick water from an automobile floor carpet?

I wouldn't...ever see what happens to wet cat litter? And then you have to get all the little granules out of the carpet.
I'd use a shop vac/wet vac to pull as much of it out as possible..then run the A/C on recirc as long as possible. Either that or pull the carpet out completely and let it dry that way.

shop vac and running the heater in the car should help...if you have a garage that would work..even running a cord to it and placing a fan in there well help.
just wanted to make sure wasnt a heater core leak or something
