Should I have installed a one way valve on the return line of the recirculation for the tank less hot water system?
It doesn't mention anything in the install manual about this.
I am thinking that when running the hot water at the far point I will be drawing water from the return line as well.
Even though it kept heated, it is not as hot as the water passing through the heater.

You should have 2 check valves in the system.
First one is in the cold water supply line BEFORE the recirc. return line ties into it, oriented so that no hot water can be sent into your cold water system.
The second one is in the recirc. line itself, oriented so that no cold water gets sent into the recirc. line.
