Flooring Tile - grout vs caulk?

hello everyone,

I have a question about the phrase "change of planes". My understanding is that term "change of planes" refers to the question of where to use grout vs where to use caulk. And an example of a change of planes, is where walls change direction, in a tiled stand-up shower. I further understand that in this application, where the walls change direction, you would use caulk and not grout. If that is correct and I believe it is, why can't I find a contractor that knows this. Every single one that I've asked (and I asked many) says to grout first and apply caulk/silicone over the grout. It seems to me that this defies the whole concept of using caulk in a change of plane. The reason being is, that flexable caulk will hold up better to expansion and contraction than rigid grout. Where am I going wrong.
