The last area that I need to prep before drywall, is my ceiling. I have 16 on centre joist so I am going to attach the drywall directly to them. However, they are not perfectly level, there may 1/4" off on some. Will this be noticable when the drywall installed and the ceiling is painted. I want to stay away from strapping or U channel. Someone suggested to get a electric hand plainer and plane the higher joists down. What do you think?

It's hard to say how noticable it would be. A lot depends on lighting and angle of sight, texture or lack of can also play a role. If just a few are too low, I'd plane them down. If one or two are bowed up - sister a 2x to them or attach a thin strip as a shim.
