I need to remove one of the substation units from my very old (30 yr +) Nutone intercom system. It's in the way of new cabinets being installed. Is there a wiring diagram for these old units anywhere? Can I just hopefully connect the appropriate wires together as if it was an uninterrupted run, push back into the wall, and cover the hole?

Check the master station. You will probably find a separate group of wires for each substation. If this is the case, you can simply remove the sub and rough in box and cap off the wires in the wall. You could also remove that stations wires at the master for a totally dead circuit.
