My husband and I just bought our first house and are remodeling most of the interior. We would like to refinish the brick fireplace which looks like the previous owners had at one time installed a fireplace insert, because they refaced the brick with terrible-looking marble using some thick and viscous glue or plaster. Does anyone have any suggestions for removing the marble and refacing/refinishing the brick without having to take down the entire chimney in the process?

Congrats on the new home!
Without seeing it (hint- post a picture :)) it would tough to say but I would bet you could chip off the marble with a hammer and chisel. If it is big you could rent a chipping hammer which is kind of like a hand held jack hammer.I'm suggesting to remove the marble because not much sticks to marble.
Depending how that comes off you could then cover it with cement board and put on a tile you like or do a cast stone product. You may have to put on wire mesh and do a scratch coat for the cast stone. Both suggestions are not super hard to do you just need to mix your mud to the right thickness and the time to do it.
Another suggestion: If you go with stone, and your fireplace is not too big, check on Craig's list for a small batch of leftovers somebody is selling.
