engine starts and ticks over perfectly, but at approx. 2100 - 2500 revs, misses, then above 2500 runs ok again. Any ideas on what the problem may be?

Welcome to the forums.
I would start with new spark plugs and then check and or adjust the carb synk. If I remember correctly those carbs have a solid arm connecting them so they need to be staggered by 10 mm on the vaccume gaugees with the bottom pulling more vaccume.
Another thing to check is your fuel filters.
